Curry Leaves Podi\Karuvepilai Podi:
Curry leaves are rich in carbohydrates,fiber,calcium, phosphorous,iron,magnesium, copper,minerals and vitamins too.It has lot of medicinal benefits too.Curry leaves podi mixed with a tsp of ghee\oil will be best accompaniment for rice and idly dosa varieties.You can make podi idly or podi dosa by using this podi.Its a simple and healthy recipe.You can store upto a month in air tight container.
Curry leaves Podi:
Ingredients:
1/2 cup Urad dhal
1/2 cup Channa dhal
3/4 cup dry red chillies(spicy)
2 cup curry leaves
1 tsp asafoetida powder
1/2 lemon size tamarind
1 tbsp black sesame seeds
1/2 tsp oil
1 tsp rock salt
Method:
- Dry roast Channa dhal and Urad dhal until it turns light golden brown color in a medium flame.
- Dry roast black sesame seeds in a low flame.Let it splutter.
- Curry leaves should be dried in a shadow for 1 or 2 days.Then dry roast in a pan for 2 min.(you can directly dry roast for few mins in medium flame).
- Roast red chillies by adding a tsp of oil in a medium flame for 2 mins.Switch off the flame.
- Roast asafoetida Powder,rock salt and tamarind in the pan heat.Allow it cool and grind to a coarse powder.Store it in a air tight container.
Curry Leaves Podi Idly:
- Heat ghee\oil in a pan,add mustard seeds,urad dhal,asafoetida,curry leaves.Let it splutter.
- Roast idlies on both sides and sprinkle freshly grounded curry leaves and toss for few mins.
- Serve hot with chutney as per your choice.
