Cauliflower Rice\Gobi Rice:
Bored of eating regular variety rices,lets see how to prepare this Gobi rice.First time tried this recipe and it was a huge hit in my home.Hence posting the recipe in my blog.Cauliflower rice is a mild flavoured rice loaded with lots of nutrients.
Servings:3
1 Cup = 250 ml
Ingredients:
To Cook Rice:
- 1 cup Rice(used karnataka ponni)
- 2 1/4 cups water
- 1 tsp oil
To Saute & To Grind:
- 1 tsp oil
- 1/2 chopped medium size onion
- 1 chopped medium size tomato
- 5 garlic cloves
- 1/4 inch piece of ginger
- 2 tbsp water
To Parboil Cauliflower:
- 2 1/2 cups cauliflower florets
- 2 cups water
To Roast Cauliflower:
- 2 tbsp oil
- Parboiled cauliflower florets
- 1/2 tbsp kashmiri chilli powder
- 1/2 tbsp red chilli powder
- 1 tsp salt
For Gobi Rice:
- 1 1/2 tbsp oil
- 1 bay leave
- 2 cloves
- 1 finely chopped green chilly
- 1/2 chopped medium size onion
- Grinded paste
- 1/2 tbsp kashmiri chilli powder
- 1 tsp red chilli powder
- 1 tsp garam masala powder
- Salt as required
- Cooked rice
- Roasted cauliflower
- Coriander leaves for garnishing.
Method:
- Wash and soak the white rice for 30 mins.Add 21/4 cups water and pressure cook for 5 whistles.Once pressure releases,add a tsp of oil(to avoid stickiness and mix well.Spread it on the plate.
- Heat oil in a pan,saute the ingredients mentioned under 'To Saute & to Grind'.Saute until tomatoes turns little mushy.Grind to a fine paste by adding water.
- Parboil the cauliflower by adding water for 5 mins in a high flame.
- Heat oil in a pan,add the parboiled cauliflowers,chilli powders and salt.Roast(medium flame for 10 mins) it until cauliflowers turns light golden brown.
- Heat oil in a pan,add bay leaves and cloves.Let it roast for a second.Then add in green chillies and onion,saute it until onions turns light brown.
- Then add in the grinded paste,spice powders and salt.Saute it until oil oozes out from the mixture(app 15 mins in medium flame).
- Finally add in the roasted cauliflowers and cooked rice.Saute it for 5 mins in medium flames(masala gets coated evenly to the rice).Garnish with coriander leaves and switch off the stove.
- Serve hot with raita or poriyal as per your choice.
Note:
- Adjust spice powders and salt according to your taste.
- You can use basmati rice too.
