Instant Bonda & Beach style onion tomato chutney:


First time tasted this bonda in a tea shop near my native. My aunt used to buy this whenever she visits my home during my childhood days. Its one of my favorite eve snacks.So I attempted in my home and its a huge hit. Idly dosa batter easily available at our home. This bonda is a simple and crispy snack recipe. You can make this bonda within 15 mins. One important thing is to use only fermented idly dosa batter.
 Onion tomato chutney is spicy tangy chutney. Its a perfect combination for this bondas. Taste of this chutney will be similar to the beach style kara chutney .

Detailed Recipe:
1 cup = 250 ml
Ingredients: 
Bonda:

  • 2 cups idly batter
  • 1/4 cup rice flour
  • 3 green chillies,finely chopped
  • 1 medium size onion,finely chopped
  • 2 stalks coriander leaves,finely chopped
  • Salt as required
  • Oil to deep fry


For Onion Tomato Chutney:
To Grind:

  • 1 large tomato,chopped
  • 1/2 medium size onion,chopped
  • 1 garlic clove
  • 4 Small onions
  • Small piece of tamarind
  • 6 red chillies

To Temper:

  • 1 tbsp gingelly oil
  • 1/4 tsp mustard seeds
  • 1/4 tsp urad dhal
  • Pinch of asafoetida 
  • Curry leaves
  • Grinded chutney
  • 1/2 cup water
  • Salt as required

Method:
1.Bonda:

  • In a mixing bowl,add in fermented idly batter,rice flour,onion,coriander leaves,green chillies and salt.Mix well without any lumps,keep aside.
  • Meanwhile,heat oil to deep fry the bondas.Once it is hot,drop small amount of batter to the hot oil,deep fry until it changes light golden brown colour.

2.Onion Tomato Chutney:

  • In a mixie jar,add in all the ingredients mentioned under ‘To Grind’.Grind those without adding water.
  • Heat a gingerly oil in a pan,add mustard seeds,urad dhal.Let it splutter.
  • Then add asafoetida and curry leaves.Then add in the grinded chutney,water,salt.
  • Cover and cook for 10 mins in a medium high flame(to avoid raw smell).Stir in between.
  • Open the lid and cook for another 3 mins.Switch off the flame.
  • Serve bondas with hot tea.

Note:

  • Use only fermented idly dosa batter.
  • If dosa batter is little watery ,ad extra 1-2 tbsp of rice flour.Else bondas will drink more oil.
  • Drop small amount of batter to the oil,then only bondas will be crispy.
  • Adjust spice levels according to your taste.
